RABBIT’S FOOT
(serves four)
350 ml/12 oz Åhus Akvavit
150 ml/5 oz Lingonberries
1 Fresh sprig rosemary
2 Pieces star anise
Simple syrup to taste
METHOD
Combine ingredients into a sealed plastic bag and sous vide at 65C for one hour -or- combine ingredients in an airtight container, cover and steep infuse overnight. Allow mixture to cool, if necessary. Muddle lingonberries before straining. Add simple syrup to taste, bottle and refrigerate. To serve, simply pour over ice. Garnish with star anise.
