Inspiration Behind the Brand

⁣In dreaming up our fresh approach to aquavit, we knew we wanted to take a deep dive into our abundant natural surroundings — Sweden, distilled.

For guidance, we looked to Sweden’s own Carl Linnaeus (1707-1778); the botanist, zoologist, taxonomist and physician who created the classification systems by which all living organisms are organized, even to this day.⁣

The relentless curiosity that drove Linnaeus is something we strive to incorporate into our work, experimenting with botanicals and cataloguing our process for future generations. Without him, there would be no us.

Shake first three ingredients with ice, strain over a large rock. Gently pour wine over the back of a barspoon. Garnish with orange zest & star anise.

The Story Of Our Winter Apples
The Story Of Our Winter Apples

The apple component in Åhus Midvinter is a distillate made from Swedish apples. We source it from a tiny craft distillery called Norrtelje Brenneri, that specializes in apple distillates of all types. The species vary, but the distillate comes predominantly from Aroma and Ingrid-Marie, both well-known in Sweden.

 

Besides Ingrid-Marie and Aroma, the distillate is made also from apples without any commercial name. Norrtelje Brenneri buys assorted apples from a local man who has been working at nurseries and bred some of the apple trees experimentally, producing ongoing diverse fruits that change with each harvest.

5 oz/150 ml Hot apple cider -or- chamomile tea

.5 oz/15 ml Honey

 

 

METHOD

Build in a tempered glass, gently stir to incorporate. Garnish with a lemon wheel & cinnamon stick.

(serves four)

350 ml/12 oz Åhus Akvavit

150 ml/5 oz Lingonberries

1 Fresh sprig rosemary

2 Pieces star anise

Simple syrup to taste

 

METHOD

Combine ingredients into a sealed plastic bag and sous vide at 65C for one hour -or- combine ingredients in an airtight container, cover and steep infuse overnight. Allow mixture to cool, if necessary. Muddle lingonberries before straining. Add simple syrup to taste, bottle and refrigerate. To serve, simply pour over ice. Garnish with star anise.

Experimental batch Åhus Green” features hand-picked lovage, an herbaceous perennial plant that tastes a bit like celery leaves with hints of mint and anise. Its blended with caraway, lemon peel and our good pal rosemary. On the nose, Green” is vegetal and citric with the palate giving a slight bitterness and briny finish which, weve discovered, makes for a damn good cocktail.

25 ml/.75 oz Turmeric Black Pepper Honey Syrup*

25 ml/.75 oz Fresh lemon juice

30 ml/ 1 oz Red bell pepper juice

2 dash Habanero bitters

 

METHOD

*Syrup – 240 ml/8 oz honey, 120 ml/4 oz boiling water, 2 g/.5 tsp black pepper, 3 cm piece fresh turmeric. Blend all ingredients until incorporated. Allow to cool and strain.

Rim a chilled glass with smoked salt. Shake ingredients with ice and double strain over a large ice cube. Garnish with bee pollen.

Ancient Greek scholars are said to have worn rosemary garlands on their heads during examinations to jog their memories. The goddess of love, Aphrodite, is also frequently depicted with rosemary. Its allure persevered well into the Middle Ages – Shakespeare mentioned rosemary in five of his plays.
